Krajnji cilj nam je da uspostavimo i sacuvamo balans kod armagnac-a:

a) uspostaviti balans – floralnih, vocnih nota i prepoznatljivost izvornog vinskog destilata, vina
b) uspostaviti balans – jacinu tanina(polyphenols) i ostalih sastojaka koji dolaze od hrastovog bureta
c) uspostaviti balans – alkohola
d) uspostaviti balans – sekundarne note koje dolaze od procesa odlezavanja u hrastovom buretu

 Mladi armagnac sa primarnim mirisom (prvih cetiri godine zivota-VS); lipa, med, kruska, dunja
* rana zrelost armanac-a sa razvojem sekundarnih mirisa (peta-VSOP, sesta-XO, sedma godina); sljiva, kandirana pomorandza, orah, miris koze
* puna zrelost sa sekundarnim razvijenim mirisom (do dvanaeste ili vise godina); hrast, vanilla, biber, kakao, datule.

Oznake na Armagnacu:

* Tri zvezdice – (prve dve godine u hrastovom buretu)
* VS – very special or superior (veoma specijalan ili superioran) – cetiri godine u hrastovom buretu
* VSOP – very superior old pale (veoma superioran staro bledilo) – pet godine u hrastovom buretu
* XO – extra old (ekstra star) – sest godine u hrastovom buretu
* HORS D’AGE – beyond age (iza starenja) – deset godine u hrastovom buretu

* Single Vintages. These are very special brandies that were distilled from the wine of the vintage stated on the bottle.They were aged and matured on purpose to be bottled and sold as such. There are also a few estates that distil, age and bottle single varietal, single vintage Armagnacs. These are considered as great specialities and are quite rare to find on the market.
